Christmas Roast

In this country, roast pork is the thing to eat on Christmas Day. Also, like all other latin american countries, Christmas Day falls on the 24th of December and not the 25th. On the 23rd, as we drove to the nearest large city through rural roads to get some last minute Christmas groceries, we saw whole pigs everywhere.

They were all dead and were either being prepared to be roasted over an open fire pit or were already in the cooking process. We were told that last year, an uproar ensued when there were not enough pigs to go around the whole nation and some people had to forgo their leg of pork at Christmas dinner.

As for me, I am just glad I do not eat pork in any way shape or form and after having seen how they prepared the pigs for roasting, it is not too farfetched an idea for me to become a vegetarian…..
